When Life Gives You Ripe Bananas… Bake Something Fabulous!

I've been staring at the seven bananas I took camping over the weekend...wishing they hadn't been stood on, squished in the car, dying in front of my eyes.  I have no idea why I thought we would eat 7 bananas on a two day camping trip...but there we have it.  .

I also HATE to waste anything, so at approximately 3 pm, when I was having my afternoon cup of tea...the magic happened. I literally PIMPED up my banana bread...and it was epic. I got this idea from a lovely lady who used to work reception at work a few years ago, and I remember thinking how clever she was putting some sexy banana slices under a glorious coating of brown sugar. It went all crusty and glorious and the addition of cinnamon made all my dreams come true. A touch of culinary glam

It’s perfect for busy families, after-school snacks, or a weekend bake that smells like a warm hug. Best of all? It’s a quick and easy banana bread recipe that delivers maximum flavour with minimal fuss.

📝 Cinnamon and Brown Sugar Banana Bread Recipe

✨ Ingredients:

  • 60g softened butter
  • 1 tsp ground cinnamon (+ extra for topping)
  • 1 tsp salt
  • 140g dark brown sugar (+ 2 tbsp extra for the topping)
  • 125 ml milk
  • 10 ml vanilla extract
  • 2 large ripe bananas (mashed)
  • 1 banana (sliced for topping)
  • 2 large eggs
  • 300g self-raising flour

👩🍳 Method:

  • Preheat your oven to 180°C (fan forced).
  • In a stand mixer, cream the softened butter and brown sugar for 3–5 minutes until smooth and fluffy.
  • Add all remaining ingredients and mix on low speed until a thick, delicious batter forms.
  • Grease a large baking dish or loaf tin and pour the batter in, smoothing the top with a spatula.
  • Decorate with sliced banana, then generously sprinkle the extra brown sugar and LOTS of cinnamon over the top. This creates the most heavenly, golden crust!
  • Bake for 30 minutes, or until a skewer inserted into the centre comes out clean.
  • Allow to cool slightly before slicing, serving, and watching it disappear fast!  And expect a round of applause or a few hugs from the family for this one! They will LOVE it!

💡 Serving Tips

  • Serve warm with butter, or toast slices for an extra crispy edge.
  • If you want to be really fancy serve with a whipped vanilla butter
  • Try with vanilla ice cream and a drizzle of caramel for a dessert twist.
  • Pack it in school lunches or serve with tea — it’s versatile and crowd-pleasing and will be fresh for at least 2 days! 
  • You can also slice this and then store in the freezer and toast when desired...such a great way to stop wasting overripe bananas!
