🥩 Week 1: Fire & Foundations

Master the Maillard Reaction! We dive into the science of searing to unlock maximum flavour. Salt, fat, acid, and heat will finally make sense.

Skills: Searing masterclass, bread-making, stocks, sauces, gelatine and sugar work.

The Menu: The Perfect Steak + Sauces, Truffled Potato Rosti, Roasted Seasonal Vegetables, Jus vs Gravy Session, Rosemary Dinner Rolls, Lavosh, Grissini, Sticky Asian Stir-fry, & Lemon Panna Cotta.

🍗 Week 2: The Poultry Professional

Demystify knife skills, trussing and deboning. Learn the knife skills used in the world’s best kitchens to transform humble poultry into a masterpiece. 🔪

Skills: Spatchcock, trussing, roulades, emulsion sauces, and blowtorching.

The Menu: Gruyère Roulade, Perfect Poached Eggs with Burnt Butter Hollandaise, Brioche,  Around the World Chicken, Classic Creme Brûlée.

🥓 Week 3: The Pork & Spice Odyssey

Conquer the "World's Best" crackling: 100% success rate for life! 🌍🔥

Skills: Pork Crackling Perfection, Twice-cooking techniques, Braising, and the Spices & Seasonings Masterclass.

The Menu: Braised Moroccan Belly (Perfect Crackling!), Sticky Plum & Ginger Ribs,  and Spice Night

🥐 Week 4: La Patisserie 

Patisserie skills and fundamentals. We conquer the "Big Three" of pastry for show-stopping results and life time confidence. 🍰 Wear your stretchy pants for this session.

Skills: Choux au Craquelin, Shortcrust, and Puff pastry mastery/Lamination. Crème pâtissière. Spun Sugar.

The Menu: Croquembouche, Pepper Porcini Chicken Tarts,  Braised Moroccan Lamb Shoulder with date and pistachio gravel, Apple Lattice Pie(Jalousie)

🥟 Week 5: Dumplings, Fish Perfection & Preserving, Home Smoking

Learn to handle delicate fish for 100% perfection, master the art of crispy skin, and discover how to infuse deep flavour with home smoking and artisan preserving. 🐟🔥 Then roll up your sleeves and master the ancient art of dumpling rolling. 

Skills:  Crispy skin and perfect fish (no sticking and flaking), stovetop smoking secrets, artisan preserving, and the "Dumpling Master" folding confidence.

The Menu: Crispy Skin Fish of the Day, House Smoked Salmon, Handmade Seasonal Preserves + Fermenting, Silk-Road Steamed Dumplings with a fragrant  dipping sauce.

🍝 Week 6: The Grand Finale – Plating & Performance

Bring it all together with "Culinary Bling" cheffy touches and professional presentation. 📸✨

Skills: Gourmet Pasta, Gnocchi, Sauces, advanced plating, stacking, and knife speed.
